Pot Digestion Gas PDG (160, 200, 250, 300, 400, 500 liters) intended for the preparation of a wide range of products:
• Confectionery industry – sugar syrup, invert syrup, condensed milk, confectionery or chocolate glaze, jam, marshmallow mass, caramel mass, any confectionery mass, fillings, marmalade, vegetable and fruit mass, etc.
• Culinary production – preparation of second and third courses at catering establishments: broths, vegetables, side dishes, compotes, drinks, sauces, as well as boiling water.
Dairy industry – boiling milk.
Feature of the equipment is the use of food glycerin as a heat carrier.
Achieve a high efficiency of a gas burner, only food-grade glycerin is used as a heat carrier due to its high heat capacity.
Main application is the confectionery industry. A feature of this type of pots is a significantly higher operating temperature, therefore they are used for cooking syrups (the cooking temperature of invert syrup, for example, is 110 ° C), marmalade. In this case, the operating temperature can reach 200 ° C.
Device: Gas cooking pots PDG-160, PDG-200, PDG-250, PDG-300, PDG-400 are stationary pots, they are prefabricated welded structures. The cooking vessel is made of stainless steel sheet with a thickness of 2 mm (walls) and 3 mm (bottom), hermetically connected to the heating jacket and heat generator. The brewing vessel is closed with a lid consisting of two halves. Heating jacket and heat generator – the space between the brewing container and the outer wall is filled with heat carrierglycerol. A gas burner and a coolant drain valve are installed under the heat generator. Heat carrier and product temperature sensors are installed on the heating jacket. The coolant temperature is set and controlled by a meter – regulator installed on the control panel. Optionally, a gear motor with stirring is installed on the bracket. A tap with a passage of 40 mm is installed on the pot to drain the finished product. Optional passage 100 mm.

Limitations:
• This pot is not recommended for the preparation of combined fats (e.g. margarine), as this requires other heating methods.
• It is not recommended to use the cooker for small quantities of raw materials (for example, when the volume of the prepared syrup is less than half of the nominal capacity of the pot), as this can cause a large inertial heating (for example, if you have a pot of 160 liters, then the inertia when heating 15 liters of syrup can be 20 ° C or more). In this case, the inertia is considered to be no more than 10 ° C.
